Maize, also known as corn, is a cereal grain first domesticated by indigenous peoples in southern Mexico about 10,000 years ago. The leafy stalk of the plant produces pollen inflorescences and separate ovuliferous inflorescences called ears that when fertilized yield kernels or seeds, which are fruits. If the ears are shucked, place them into a plastic bag, such as a produce bag from the supermarket, and store them in your refrigerator. Either way, fresh corn should be eaten within a couple days. Otherwise, it becomes dried out and less sweet. If eating your corn that soon isn't possible, consider freezing it. Portion size and digestible carbohydrates are included in glycemic load (GL), along with glycemic index. The GL of a medium ear of corn is 15. Whole corn, like you eat on the cob, is considered a vegetable. The corn kernel itself (where popcorn comes from) is considered a grain. Like all cereal grains, corn is primarily composed of carbs. Starch is its main carb, comprising 28–80% of its dry weight. Corn also provides small amounts of sugar (1–3%) ( 1 , 2 ). Sweet corn, or sugar corn, is a special, low-starch variety with higher sugar content, at 18% of the dry weight. Fresh corn is considered a starchy vegetable. Its nutrient content differs from dry corn, and it is eaten in different ways -- often on the cob, as a side dish, or mixed with other vegetables. Corn, (Zea mays), also called Indian corn or maize, cereal plant of the grass family (Poaceae) and its edible grain. The domesticated crop originated in the Americas and is one of the most widely distributed of the world's food crops.
